Hong Kong Exclusive Premiere! “LE CHOCOLAT ALAIN DUCASSE” Showcased in The Lobby Lounge's Afternoon Tea Set in December
For the first time ever in Hong Kong, the exclusive Le Chocolat Alain Ducasse will be featured in a selection of exquisite chocolate desserts comprising the Lobby Lounge's Afternoon Tea Set during the month of December. |
|
The Festive Tea Set by the hotel's Executive Pastry Chef Cyril Dupuis will feature three chocolate desserts using a special dark chocolate blend from Le Chocolat Alain Ducasse made from Cocoa beans imported from four origins: Ecuador (Nacional Arriba), Peru (Trinitario), Madagascar (Trinitario) and Sao Tome (Forastero Amelonado). The cocoa beans from these four countries have been selected for their specific notes: floral (Ecuador & Peru), red fruits (Madagascar) and spices (Sao Tome). This dark chocolate 75% cocoa reflects the purity and the personality of the artisan manufacturing of Le Chocolat Alain Ducasse.
Executive Pastry Chef Cyril Dupuis' three Le Chocolat Alain Ducasse Desserts include:
> Chocolate/Praline with exotic fruit
> Intense Dark Chocolate, Crispy Macaroons
> Chocolate Mousse, inspired by Alain Ducasse's "Benoit" Bistrot in Paris & New York
Le Chocolat Alain Ducasse is unique in its craftsmanship – featuring artisan chocolates made from the best cocoa beans sourced from around the world. These are then roasted in Ducasse's own factory to then create his exclusive homemade chocolates. By going back to the roots of the art of chocolate, selecting the best cocoa bean varieties, carefully roasting them, Alain Ducasse and his Artisan Chocolate Maker Nicolas Berger create products with unique and original flavours. The cocoa beans they select come from a variety of terroirs, all situated around the equatorial belt, with each variety selected for its gustatory identity.
The Festive Season Tea Set also includes: Chestnut/Rum Raisin Cake, Cranberry/Cherry Cheese Cake and Tagada Strawberry Paulova. Savoury items include Fresh Sliced Boston Lobster with Spicy Avocado on Endive, Smoked Salmon Tartar, Plain Yoghurt, Lemon Bread Roll; Foie Gras Custard with Chocolate Macaroon and Coconut and Lemongrass Cream Cake. Guests will also enjoy Plain, Raisin and Christmas Ginger Flavoured Scones served with Devonshire Clotted Cream, Earl Grey Tea Jelly and Strawberry Jam.
