From September 19 – 28, InterContinental Hong Kong's Lobby Lounge will welcome Guest Pizza Chef Riccardo Scaioli, who will tailor-make a selection of authentic Italian Pizzas using unique recipes made with a special 100% Italian stone ground wheat flour, fresh seasonal ingredients and precise baking temperatures.
From Padova, Italy and with over 30 years of culinary experience, Guest Chef Riccardo Scaioli,is a specialist in traditional Italian pizza and yeast. For over 10 years, Chef Riccardo has been an instructor of pizza making, teaching chefs around the world how to work with natural yeast - his secret to making the perfect pizza. He is also a consultant for opening pizzerias globally. Working with Mulino Quaglia, a leading company in Italy for the production of soft wheat flours, Riccardo advises the new Michelin star restaurants in Italy on this specialized pizza making process.
While at InterContinental Hong Kong, he will share his authentic Italian pizza recipes with the hotel's Executive Chef Nicola Canuti and his team.
The Secret to the Perfect Pizza
Guest Chef Riccardo will share his secret pizza ingredient with InterContinental Hong Kong's Executive Chef Nicola Canuti. To create an authentic “Slice of Italy” in Hong Kong, he is bringing a special 100% Italian stone ground Italian wheat flour directly from Mulino Quaglia, which is the only Italian industrial mill which produces a line of stone milled flours with 100% Italian grains.
The pizza dough is made with a specialised technology that gently blends the wheat grains in order to retain the wheat flour's nutritional value. This special flour has the taste and fragrance of wheat and an unparalleled texture and colour. The special stone ground wheat flour produced by Molino Quaglia demonstrates that taste and technology can give the flavours of the past with the nutritional balance demanded by contemporary consumers.
It takes three days to make the pizza dough, using a very specialized process and machine in which the temperature for the flour, machine and room are closely monitored. Carefully mixing the same amount of water and flour very slowly, the dough becomes very soft and elastic, resulting in very fine and crispy pizza.
From September 19 - 28 (12 noon – 2:00pm and 6:00pm – 12midnight), the Lobby Lounge will showcase a menu of Chef Riccardo's authentic specialty pizzas from various regions of Italy, along with a selection of Italian beers.
Guests can choose from:
- Pizza Scrocchierella (from Taormina, Sicily)
- Pizza Pala Romana (from Rome)
- Pizza Genovese (from Genoa)
- Pizza Napoletana (from Naples)
- Dessert Pizza
On offer will also be five imported Italian Beers:
- Peroni
- Menabrea 1846 Pale Lager
- 32 Via del birral- Tre + Due
- Menabrea Amber
- 32 Via del birral – Nebra
