An exciting roster of chefs from Michelin-starred establishments and mixologists from The World's 50 Best Bars in Singapore will be visiting London next month to showcase their innovative cuisine with cocktail pairings at the Singapore Supper Club.

In partnership with D&D London, The Singapore Supper Club will open in London for three nights only from 4 - 6 October, 2018. The chefs and mixologists will be popping up at three D&D restaurants, Angler, Avenue and Bluebird. Foodies should book fast for an exciting opportunity to enjoy a #TasteofSingapore and a selection of three and six course menus from the esteemed chefs. Singapore is globally renowned for its exciting culinary and social scene. With 39 Singaporean restaurants ranging from street food hawker stalls to fine dining restaurants being awarded Michelin stars this summer, and six of the World's 50 Best Bars calling Singapore home, you can be sure that the pairing of the chefs and mixologists will create a palette thrill.

Each Singapore Supper Club will be enhanced by a cool soundscape mixed by members of A Phat Cat Collective, from Singapore, including DJ Aurora, DJ Ya5th and DJ Joshua P.

Julien Royer of two Michelin-starred restaurant Odette paired with the talented Vijay Mudaliar of Native

Julien Royer, Odette (Two Michelin stars)

Housed in National Gallery Singapore, Odette serves modern French cuisine that is guided by Chef Julien's lifelong respect for seasonality, terroir and artisanal produce, which results in artistic and refined food presentations.

Having worked for Michel Bras in France and Antonin Bonnet in London, French Chef Julien moved to Singapore in 2011, where he oversaw modern European restaurant JAAN before opening Odette in 2015, which he named after his grandmother.

In less than two years, Odette earned two Michelin stars and a place on the Asia's 50 Best Restaurants list. Odette currently ranks 5th in Asia's 50 Best Restaurants 2018 and 28th in the World's 50 Best Restaurants 2018.

Vijay Mudaliar, Native

Vijay is the mixologist behind Native, the cocktail bar on Singapore's Amoy Street. He gained international recognition in 2015, when he won the international cocktail competition Diplomatico World Tournament Singapore Final with his cocktail 'Jewel of The East'. Vijay spent two years at Operation Dagger before opening Native, his very own cocktail bar.

Native is committed to using only locally forage products and supporting local and regional craftsmen – from the ingredients (such as jasmine blossom, and turmeric leaves), cocktail list to the drinking vessels and music.

Native is number 47 in The World's 50 Best Bars 2017 and number 8 in Asia's 50 Best Bars 2018 – and Vijay was recently voted Altos Bartenders' Bartender 2018.

A Phat Cat Collective

A Phat Cat Collective is an Entertainment Consultancy based in Singapore, specialising in curating unique concepts, programmes, events and marketing that thrive within the Nightlife and F&B community. Started by three entertainment stalwarts, Joshua Pillai, Francesca Aurora Way and Yafith A. Hamid, they have helmed some of Asia's most prominent institutions such as CE LA VI, Bar Rouge, KU DE TA Singapore, Attica and Potato Head.

The recently opened NINETEEN80, A Phat Cat Collective's first nightlife concept, is an 80s inspired arcade bar and discotheque, featuring a heavy dose of nostalgia through fond retro arcade games, nostalgic cocktails with a twist and a funky line-up of Singapore's top DJs throwing down all-time favourites.

Malcolm Lee, Candlenut paired with Philip Bischoff of Manhattan

Malcolm Lee, Candlenut (One Michelin star)

Candlenut is the world's first Michelin-starred Peranakan restaurant. Peranakan or Nyonya cuisine comes from the Peranakans, descendants of early Chinese migrants who settled in Singapore, and other Straits regions.  They married local Malays and the cuisine combines Chinese, Malay and other influences. Candlenut serves up refined Peranakan cuisine that preserves the essence and complexities of traditional food, with astute twists that lift the often rich dishes to a different level.

The culinary journey of Candlenut's Head Chef and owner Malcolm Lee began by helping his mother and grandmother in the kitchen as a child. A few years later, he became the first Singaporean recipient of the Miele Guide Scholarship, granting him a place at the country's At-Sunrice GlobalChef Academy, where he was able to explore his Asian culinary roots.

Malcolm opened Candlenut back in 2010 – under the name of Candlenut Kitchen. It received its first Michelin star in 2016, and has retained its star ever since.

Philip Bischoff of Manhattan

Inspired by the Golden Age of cocktails and fine drinking, Manhattan is reminiscent of a grand hotel bar, modern yet with a touch of old New York glamour and sophistication – and it currently hosts the coveted title of Asia's Best Bar. Manhattan boasts a selection of inspired craft cocktails and gourmet bar food from the 1920s.

Berlin-born Philip Bischoff is the Manhattan's bar manager. He started his career at Le Lion – Bar de Paris, and then to Amano Bar, where, under his stewardship, it was awarded the 'Best Hotel Bar and Bar Team' at the Mixology Bar Awards in Berlin. At Manhattan, Philip is all about the experience: the food, the ambience, the people and the service.

Manhattan is number 7 in The World's 50 Best Bars 2017 and number 1 in Asia's 50 Best Bars 2018.

Jason Tan, Corner House, paired with Sasha Wijidessa, Operation Dagger

Jason Tan, Corner House (One Michelin star)

Corner House is a contemporary restaurant located within the Singapore Botanic Gardens, which was conferred with UNESCO World Heritage Site status in July 2015. The restaurant is named after botanist E. J. H. Corner, who resided in the property for 13 years during his 16-year tenure as the Assistant Director of the Singapore Botanic Gardens.

“Gastro-Botanica” is the style of contemporary cuisine created by Chef Jason Tan, which emphasises refinement and quality, and gives equivalent weight on the plate to protein and botanical elements.

Chef Jason Tan started his career at the famed Les Amis restaurant in 2004, progressing through Le Saint Julien and the three-Michelin-starred Robuchon a Galera. In 2008, Jason was crowned the Bocuse d'Or Singapore Champion, going on to win the Bronze trophy at the Bocuse d'Or Asian Selection and represented Asia at the Bocuse d'Or world cuisine contest at Lyon, France. As the 'Suitcase Chef', Chef Jason travels across the world in search of new ideas and inspirations for his kitchen.

Corner House features one Michelin star and ranked 23rd in Asia's 50 Best Restaurants 2017.

Sasha Wijidessa, Operation Dagger

Operation Dagger is a speakeasy located somewhere in Singapore's Ann Siang Hill, founded by Australia-born, Luke Whearty. Sous Bartender Sasha Wijidessa discovered her strong passion for cocktail making in her early years behind the bar at British gastropub Oxwell & Co.

Displaying a keen grasp of the fundamentals behind cocktail making, Sasha captured the attention of Luke, who invited her to join Operation Dagger. Sasha works closely with Luke and plays an instrumental role in conceptualising Operation Dagger's iconic innovate drinks.

Operation Dagger has a singular style thanks to a striking interior of raw concrete, minimalist furniture and thousands of light bulbs above the bar.

Foraged-for ingredients and spirits are redistilled and stored in brown apothecary bottles to deliver a strictly flavour-centric, preconception-free drinking experience – so customers order by flavours rather than the main alcoholic drink.

Operation Dagger is number 24 in The World's 50 Best Bars 2017 and number 19 in Asia's 50 Best Bars 2018.
