Forest goes from table to table in Vasco�s introducing diners to the delights of variety in water, sharing the ins and outs of the characteristics that provide waters with their unique flavors, as well as recommended food pairings, stemware suggestions, and optimum serving temperatures for enjoying both still and sparkling waters.
Vasco�s offers all day dining and guests can choose from an a la carte menu: selections are light, healthy and heavy on flavor. Menu highlights include grilled lemon and chili calamari served with fresh parsley and saut�ed potatoes, with this dish Vasco�s Water Master Forest Zhao suggests starting with a glass of bubbly S. Pellegrino. For dinner, Forest recommends pairing the pan fried beef tenderloin with Parma ham and garlic with a refreshing glass of Ty Nant.
"Many people think that all bottled waters taste the same," says Forest, delicately sipping the house water, served in a wine glass, garnished with a lemon slice. �But this of course is untrue; like fine wine, natural waters come from a unique source, they have terroir, a legend and often a long history attached to it. It's not so much, should you drink bottled water, but which kind," says Forest.
He adds, �For instance not many people know that China offers an excellent selection of bottled water, take Lao Shan mineral water for example, it is drawn from a crevice in the granite of Mt. Laoshan that is 117 meters deep under the earth, this is one of the purest most natural waters, excellent in quality and it contains the rare Sr-H2SiO3 compound, which is rich in trace elements and mineral substances. The taste, the mouth feel, the aftertaste, the carbonation should all be considered when judging bottled water.�
Forest has been drinking bottled water for as long as he can remember and he enjoys, developing his water palate. Forest even offers an invitation-only water tasting evening, where diners have the opportunity to sample the restaurant's vast water selection.
Stefan Bauer, food and beverage manager of Hilton Beijing Wangfujing who introduced the water program to Vasco�s understands the importance of bottled water. �At Hilton Beijing Wangfujing, we believe that there are discreet differences in fine bottled water. We have selected a varied water list that matches the direction of our food menus created by our artistic culinary brigade. Drinking different water for each course highlights the subtle difference in the bottled waters and the progression adds enormously to the dining experience" he says.
Vasco�s offers more than 18 different selections of the world�s best bottled water, from China, France, Italy, Norway, Germany, Austria, Belgium and Wales. Diners can select between Ty Nant, which comes in a cobalt blue bottle that has become a collector's item in England, and Evian Natural Spring Water from the French Alps. If guests yearn for an effervescent (carbonated) drink, Perrier from southern France and S. Pellegrino from the Italian mountains are the preferred choice, however the water menu includes such fine bottled water as Gasteiner, carbonated natural mineral water, which is sourced from the Gasteiner Kristall spring, having filtered through thousands of feet of rock, the water here is as pure as the driven snow on the iced capped glaciers which surrounds it in the Hohe Tauern reserve in Austria. Gerolsteiner, carbonated natural mineral water has been a famed health tonic since 1888, due to its naturally carbonated properties another treasure is Spa Natural Spring Water, this natural water is sodium free and is lower in total mineral salts than all leading European bottled waters. /more Page 2 of 2
