Carousel brings authentic Spanish flavours back to its buffet counters

Celebrated Spanish guest chef, Esmeraldo Oteruelo, joins Carousel for the third time to present his signature Spanish cuisine on the buffet counters from 10 July to 7 August 2013. 

 

Chef Esmeraldo will be showcasing his culinary expertise with a sumptuous variety of Spanish dishes including his classic seafood specialties. A keeper of traditions, the chef advocates authenticity in his style of cooking and recipes so as to retain the essence of his home country's cuisine. Chef Esmeraldo uses fresh ingredients to accentuate the overall taste of his signature dishes.

 

During the chef's globe-trotting years, he had developed and perfected his skills in several renowned establishments all over the world, in countries such as France, Switzerland, Canada and Singapore. Chef Esmeraldo's wealth of experience from the past 48 years has made him the top choice of chef for royalties and prominent figures worldwide such as Queen Elizabeth II and King Juan Carlos.

 

Guests can look forward to savouring Chef Esmeraldo's culinary highlights such as Paella Mixta (seafood and meat paella), Carrillada Al-Andalus (braised veal cheeks), Jarrete de Cordero al Horno (Moorish lamb shanks with winter vegetables and barley cous-cous), Croquetas de Bacalao (cod croquettes) and Calamares en su Tinta (baby squid in own ink).


Carousel will also be decked in Spanish-inspired décor so guests can truly enjoy an authentic taste of Spain during their dining experience.
