Always wanted to spend the night with Davie Bowie? Now you (sort of) can. Kimpton Hotels have officially opened the doors to its new Palladian hotel; a renovated 97-room property located on the edge of Seattle's Belltown neighbourhood (2000 2nd Ave). The transformed historic 1910 building, boasts an edgy, masculine style and a touch of whimsy with celebrity-emblazoned lobby art, and a pillow in each room, including the regal-garbed likenesses of David Bowie, Leonardo DiCaprio, Tom Selleck, Dave Grohl and others.
To celebrate the opening, the Palladian is offering a “Sleep with David Bowie (Or Another Celebrity)” package, including a celebrity pillow of choice, Palladian robe and slippers, two etched rocks glasses and a bottle of local whiskey – everything that guarantees guests a Seattle sleep to remember.
Named after the building's original arched windows, the Palladian has exposed brick, reclaimed wood, and brass finishes throughout many of its 40 standard and 39 premier view rooms, along with the nine king spa rooms and nine suites. Also now open and included in the building, are two new culinary concepts led by Chef Walter Pisano. The first is a modern fresh seafood restaurant dubbed Shaker + Spear, and the second is Pennyroyal, an old-world style bar, both well-defined with separate sidewalk entries and direct access from the hotel as well.
“The Palladian is on the National Register of Historic Places, so it was important to pay tribute to the building's roots and gritty elegance of the neighbourhood, but bring a new style to Seattle's hotel landscape,” said Tom Waithe, regional director for Kimpton Hotels of the Pacific Northwest. “It's a place where out-of-towners have the inside edge on the city and locals can settle in at Shaker + Spear or Pennyroyal any night of the week.”
Shaker + Spear features a seafood-centric menu paired simply with fresh, regional ingredients. The line-up boasts numerous Northwest favourites, including a market fresh omelette, Penn Cove mussel chowder, salmon pastrami and cod suppli, served alongside a parsley herb salad; along with meatier options like a rosemary coulette steak with confit potatoes, sweet garlic puree and arugula. The drink list is well stocked with sherry-based cocktails, house-made shrubs and infusions, European-style beers and bright wines. Pulling in glass, weathered wood and other materials, the design of the 65-seat restaurant and 12-person bar is inspired by the region's maritime roots. Shaker + Spear serves weekday breakfast and dinner right out of the gate, with weekend brunch beginning the 21st February and lunch on the 23rd February.
Pennyroyal focuses on aged spirits, a rotating punch menu and bar bites prepared front-and-centre by knowledgeable barkeeps. Drinks crafted using seasonal and house-made ingredients include liquor infusions, vermouth, grenadine, tonic, bitters and more – take “Blood Brothers,” a mixture of jasmine pisco, vermut, syrah syrup and lemon. Every day from 3 to 4pm, Pennyroyal hosts a happy hour-esque “tea hour,” using locally-sourced tea to create a daily punch bowl. The opening food menu is short and sweet with 11 bites, like anchovy spicy eggplant chilli toast, mini cod sandwiches and stuffed Castelvetrano olives. Like Seattle's seasons, both the food and drinks at the 35-seat restaurant change often to reflect what's fresh and of the moment.
