AUSTRALIAN DALLAS CUDDY GUEST STARS AT STARFISH BLOO

 

 

Bali, Indonesia - For five days in February a culinary switch up will take place in the kitchen of the award-winning W Retreat & Spa Bali – Seminyak STARFISH BLOO restaurant. The Pan-Asian eatery, best known for its premier local seafood, delicious signature creations and its picturesque backdrop of Seminyak’s sandy beachfront will play host to an international guest chef.

 

From the 5th to the 9th of February 2014 STARFISH BLOO’s Head Chef, Kevin Chung will hand over his knives to Michelin star and multiple award-winning chef, Dallas Cuddy. The Australian born chef from The Prime Society in Singapore has worked in The Point’s kitchen in Melbourne and Nobu, London, while his resume boasts foodie mentors like Gordon Ramsay and Ian Curley.

 

Dallas’ signature style focuses on seasonal produce presented with a modern Japanese twist. Two of his many accomplishments include The Age Young Chef of the Year award in 2007 and obtaining two Chef Hats at The Botanical with Paul Wilson. The skilled chef’s talents extend beyond that of the kitchen walls; Dallas has also achieved awards as a restaurateur. His Japanese Melbourne establishment, Izakaya Den won The Age Best New Restaurant (2011) and was named in the Top 100 Best Restaurants in Australia (2011-12).

 

The W Retreat & Spa Bali – Seminyak continues to support Australian culinary talent, with both the Director of Cuisine, Richard Miller, and STARFISH BLOO’s current Chef de Cuisine Kevin Chung, (although born in Mauritius) calling Australia home.

 

Dallas will offer four dining experiences from STARFISH BLOO’s open-air kitchen. For those wanting to experience Dallas’ cuisine during the day, a three-course lunch menu will be on offer from Wednesday to Saturday. To witness food and wine matching at its finest, a five course-tasting menu matched to wine will also be available from Wednesday to Saturday and on Friday night a five course wine dinner will be available in ICE Bar. Dallas’ visit will conclude on Sunday afternoon when he will create some of his signature dishes for STARFISH BLOO’s iconic brunch buffet.
