A Taste of Eurasian Heritage at Town Restaurant

From 24 to 30 June 2013,  The Fullerton Hotel's Town Restaurant will reprise the riches of Eurasian cuisine with an Eurasian Heritage Lunch and Dinner Buffet. Town Restaurant's Sous Chef Sunny de Costa, who is of Eurasian descent, will be whipping up dishes that are unique to Eurasian tradition using his very own family recipes that have been handed down through generations.

 

Formed as a result of inter-marriages between Europeans and locals during Singapore's colonial times, Eurasian cuisine is a hearty blend of European cuisine, local ingredients, spices and influences. It is most renowned for its Devil's Curry - a fiery and complex red curry - however its other traditional dishes are lesser known as they are often only enjoyed in homes.

 

Ingredients used in Eurasian dishes are characterized by the community's love for spices and condiments like Assam (tamarind), sambal belachan (spiced prawn paste), lemongrass, ginger, garlic and onions, and seafood. The flavours of Eurasian cuisine are hence distinctively spicy, tangy and absolutely satisfying.

 

For instance, Chef Sunny de Costa's Devil's Curry is made with fresh and dried chilli, blue ginger, lime juice, candlenut, mustard seed and cooked with Smoked Bacon Bone and Sausages.

 

The buffet spread will comprise other tantalizing dishes such as Semur (Braised Pork with Onion and Garlic Gravy), Snapper Fish Curry with Green Mango, Eurasian style baked seafood, Seybak (Braised Pork Belly with Dark Soya Sauce and Spices), Curry Pementa (Stingray Fish in Peppery Curry), Assam Prawns (Deep Fried Prawns Tossed in Sweet and Sour Tamarind Sauce), Roasted Beef marinated with Spicy Vindaloo Spices and Stir-Fried French Beans with Shrimps and Beancurd.

 

Town Restaurant's Eurasian Heritage buffet will take place from 24 to 30 June 2013, from 11.30am to 2.30pm for lunch and from 6.30pm to 10.30pm for dinner at $53* per adult and $26* per child (6 to 12 years old). In addition to the spread of Eurasian cuisine, the buffet will also encompass a sumptuous selection of ocean fresh seafood, salads, sushi and sashimi, along with well-loved local desserts like Chendol (Shaved Ice with Palm Sugar and Pandan Rice Flour Jelly), Ice Kachang (Shaved Ice topped with Red Beans, Corn and Peanuts), Bubur Cha Cha (Coconut Milk with Sweet Potatoes and Yam) and Penget Pisang (Sweet Bananas with Coconut Cream).
