Experience a “Taste of Australia”, with premium Australian ingredients prepared Cantonese style at InterContinental Hong Kong's 2-Michelin star
Yan Toh Heen (June 8 – August 4).

Australia is well-known for the high quality of its culinary exports – especially from agriculture and aquaculture. To create his innovative Cantonese dishes for the “Taste of Australia” menu, Yan Toh Heen Executive Chef Lau Yiu Fai has sourced some of the very best Australian produce including awarding-winning Mayura (chocolate-fed) Full-Blood Wagyu from South Australia's Limestone Coast & Australian White sheep, known as “the wagyu of lamb”, thanks to its quality high protein meat that  melts-in-your-mouth.

He has also selected seasonal Australian specialty ingredients including black truffle from Tasmania and crustaceans from the pristine waters off the Australian coastline including South Australian scallops, greenlip abalone from Adelaide and mud crab from Queensland.

In keeping with the trend towards healthier cuisine, Chef Lau's new dishes, prepared in traditional Chinese cooking styles, also showcase superfoods such as golden beetroot, avocado and vinegar, along with seasonal Australian dragon fruit and pear.

The Taste of Australia Menu includes:

  • Crispy Roll Stuffed with Western Australian Baby Lobster and Dragon Fruit
  • Double Boiled Sea Cucumber with Sliced Greenlip Abalone from Adelaide
  • Steamed Ginger Egg White with South Australian Scallops and Tasmanian Black Truffle
  • Baked Avocado with Mud Crabmeat from Queensland, Tasmanian Black Truffle and Cheese
  • Wok-fried South Australian Mayura Wagyu with Golden Beetroot and
    Crispy Roll with Mayura Wagyu and Pear
  • Wok-fried Australian Lamb with Crispy Noodles served with Vinegar Sauce
