The Hotel Windsor will be helping Melbourne ease into the peak of summer with a refreshing Afternoon Tea, featuring a lychee, avocado and coconut chilled soup, and seasonal ingredients including raspberries, figs and apricots. The menu will run until 3rd March, where, in Windsor tradition, it will change to reflect the seasons.
This year, the hotel will be offering an additional Chinese New Year Afternoon Tea menu (5th – 19th February) to celebrate its links to Melbourne’s Chinese community (the hotel was built on the riches of the Gold Rush). The festive menu was created by award-winning Melbourne restaurant Sunda’s Head Chef, Khanh Nguyen, and features a contemporary South East Asian twist. Think Mushroom XO rice balls with a soy milk custard, a modern prawn toast, five spice pork rillettes sandwiches and egg jam.
Head Pastry Chef of The Hotel Windsor, Jérémie Parmentier, has also contributed a special dessert for the occasion, entitled ‘Koi’. The creation, in hues of red and yellow with specks of gold leaf, is named after the lucky carp, and a play on the Chinese phrase “Nian Nian You Yu” – a harbinger of wealth. Filled with a fresh pineapple compote, strawberry confit, matcha sponge and vanilla ganache, it is a modern take on the lucky symbols (pineapple, fish) associated with Chinese New Year.
The Chinese New Year Afternoon Tea will start on the 5th of February, when the hotel will also host a lion dance troupe who will perform a traditional dance celebration in the hotel lobby and greet guests in One Eleven at 12.30pm. The Summer Afternoon Tea menu will continue to run throughout this period.

The Hotel Windsor’s new Head Pastry Chef Jérémie Parmentier was last in Paris and has worked for Parisian institutions including Fauchon and Le Fouquet’s and renowned 5 star establishments including the Grand Hotel Du Cap Ferrat and Hotel Saint Martin in Saint Martin de Belleville.
About Head Chef, Khanh Nguyen – Sunda
Khanh Nguyen is an Electrolux Australian Young Chef of the Year (2015) national finalist and has honed his skills at award-winning establishments in Sydney including Cirrus Dining, Mr Wong, Bentley, Becasse, Red Lantern and noma (Sydney). In 2018 he moved to Melbourne to helm Sunda – an exciting modern South East Asian restaurant – which has since won a hat in The Good Food Guide (2019). Sunda has also been named best new restaurant (Time Out) and one of Australia’s Hot 50 Restaurants (The Australian).
