Drawing culinary inspiration from the Mediterranean Sea and its diverse surrounding regions, Mediterranean cuisine derives its deep flavours from simple and fresh ingredients blended with rich culture. From 29 June to 27 July, Royal Plaza on Scotts will be featuring a selection of Mediterranean dishes in its award-winning buffet restaurant, Carousel.

The hotel has once again invited guest chef, Esmeraldo Oteruelo, to prepare his signature dishes for its diners. During the chef's globe-trotting years, he has developed and perfected his skills in several renowned establishments all over the world, in countries such as France, Switzerland, Canada and Singapore. Chef Esmeraldo's wealth of experience from the past 49 years has made him the chef of choice for royalties and prominent figures worldwide such as Queen Elizabeth II and King Juan Carlos.

Chef Esmeraldo Oteruelo will be showcasing his culinary expertise with a sumptuous variety of Mediterranean dishes. A keeper of traditions, the chef advocates authenticity in his style of cooking and recipes to retain the essence of the cuisine using fresh ingredients to accentuate the overall taste of his signature dishes.

His Spanish specialties include the classic Paella Mixta, a fragrant mixed rice dish with fresh seafood, and Zarzuela de Mariscos a la Catalana, a traditional Catalan fish stew. From Italy, the land of pasta, the chef has prepared Sicilian Seafood Couscous, pasta made of crushed and steamed semolina served with a dazzling assortment of seafood; and Agnolotti di Aragosta e Scampi, a ravioli like pasta stuffed with lobster and shrimp. Asides from seafood, diners can also look forward to feast on popular French dish, Magret de Canard, beautifully seared duck breast, sliced and served with a piquant sauce made with honey, orange and thyme.

The Mediterranean Medley promotion will be available at Carousel during the dinner meal period, from 6.30pm to 10.30pm daily at $78++.
