Australian foodies visiting Canada can experience the best culinary sensations, with the 2016 Canada's 100 Best Restaurants Guide taking the guess-work out of choosing a restaurant in an unfamiliar city.
Editor-in-chief, Jacob Richler, believes the guide is indispensable to locals and visitors looking to dine out in an informed way, almost anywhere in Canada.
“The rankings are determined by factoring in the opinions of experts, including food critics, chefs, restaurateurs and the dining public,” says Jacob. “Seventy experts are selected from each province, according to its population and each is asked to submit a list of what they consider to be the 10 best restaurants in the country.
For the second year in a row, Toque! in Montreal ranked number one overall, with Head Chef Norman Laprise known for revolutionising menus throughout Canada with a focus on farm-to-table, ingredient-driven cuisine and intense collaboration between chef and producer.
Since opening in 1993, Laprise's innovative culinary style and playful juxtapositions of flavour (such as lamb tartare with melon sorbet), along with the colourful décor and discreet service, continues to be a huge hit with critics and foodies alike.
Six restaurants in Toronto, three in Montreal and one in Vancouver made the top 10 list, with Buca Yorkyville (Toronto) and Hawksworth Restaurant (Vancouver) coming in second and third respectively.
“The single most conspicuously successful new trend in the culinary sphere is the rise of the vegetable,” says Jacob. “Not of preachy, good-for-you vegetarian cuisine – but of imaginative new vegetable cooking from smart chefs who know that vegetables are as well equipped for the spotlight and centre stage as is any piece of meat or fish.
“You see it across the country – from Pigeon Hole in Calgary, to Vin Papillon and Hotel Herman in Montreal, and at Dandylion – and the new menu at Nota Bene – in Toronto.”
