About the Guest Chef – Scott Bao
With over a decade of expertise in premium Chinese gastronomy, Chef Scott Bao is renowned for his mastery of Huaiyang and traditional Shanghai (Benbang) cuisines. His distinguished career includes leadership roles at Michelin-starred and Black Pearl–listed restaurants, most notably at the acclaimed Lakeview 28 at Grand Hyatt Hangzhou. Guided by the philosophy of “Honoring heritage, not being bound by it,” Chef Bao reimagines classic flavors through contemporary techniques, creating refined interpretations that preserve the soul of tradition while embracing innovation. Special Breakfast Experience
The experience begins with The Artisan's Morning, a curated breakfast takeover by Chef Scott Bao, where the elegance of Shanghai's morning rituals is gently introduced into CIRE's signature offerings. Guests are invited to savour delicately crafted xiaolongbao filled with minced black pork, alongside handmade steamed vegetable buns and Shanghai-style sakura ebi noodles, lightly tossed in fragrant scallion oil. A comforting long-tailed anchovy wonton soup completes the experience, an understated yet soulful expression of tradition, setting a refined tone for the days ahead.

Special Breakfast Experience & 5-Course Degustation Dinner
From 16 to 17 April, the journey evolves with both breakfast and evening expressions. While mornings continue to explore rotating Shanghai specialties, the evening unveils The 5-Course Harmony, a thoughtfully composed degustation menu presented as a culinary dialogue between Chef Scott Bao and Chef Kadek.
The experience opens with a delicate amuse-bouche by Chef Kadek, before unfolding into a sequence of dishes that reflect both contrast and complement. A Shanghai-style marinated deep-fried sea fish introduces a balance of crisp texture and soy depth, followed by pan-seared long-tailed anchovy wonton pot stickers, golden and richly savoury. The narrative deepens with black truffle xiaolongbao, where Chef Bao elevates a classic with quiet sophistication.
From the Uluwatu kitchen, Chef Kadek presents Castaing duck breast, layered with candied lemon, mushroom parfait, and a refined roasted duck consommé, bringing a contemporary European expression into the dialogue. Or, you can choose a deeply satisfying slow-braised wagyu beef short rib, enriched with a gently sweet almond sauce, offering warmth and depth in every bite.
To conclude, guests are invited to choose between two distinct finales: a Cabossa chocolate creation by Chef Kadek, layered with cheese sablé, truffle parfait, porcini soil, and vincotto, earthy, complex, and refined, or a more nostalgic Chilled Manggo Sago Cream Sweet Soup by Chef Scott Bao, soft and delicately sweet, echoing the comforting flavors of Shanghai tradition.

On 18 April, the collaboration reaches its most expressive moment with The Dual Perspective Brunch, a one-day culinary showcase where both chefs present their signatures side by side. The experience flows effortlessly between cultures, beginning with Shanghai-style marinated sea fish and anchovy wonton pot stickers, alongside Sturia caviar with algae sponge and smoked gindara mousse, a refined expression from Chef Kadek.
Steamed and baked selections highlight the craftsmanship of both chefs, from classic xiaolongbao and handmade vegetable buns to Oyster Rockefeller, featuring Banyuwangi oysters with spinach and a rich cheese sauce. Lighter, seasonal expressions such as leek vinaigrette with walnut and cottage cheese and earthy grains with exotic mushrooms, pearl barley, and caciotta provide balance, while Shanghai-style sakura ebi noodles offer a familiar yet elevated comfort.
From the sea, a long-tailed anchovy wonton soup delivers warmth and depth, while the catch of the day, cooked over coal and paired with chickpeas braised in tomato sambal, reflects Chef Kadek's coastal influence. Or, you may choose from the land, the richness of slow-braised wagyu short rib is complemented by wagyu sirloin, elevated with crispy garlic, charred onion, and wafu sauce by Chef Bao.
