Singapore, 30 December 2025 – Cherry Garden by Chef Fei at Mandarin Oriental, Singapore ushers in the Year of the Horse with Michelin-starred Chef Fei's rendition of the ubiquitous Yu Sheng — a refined take on the vibrant platter, rooted in Chaoshan traditions — alongside a curated selection of Lunar New Year specialities to welcome a prosperous Lunar New Year.
Toss to a year of abundance with Chef Fei's reimagined take on Chaoshan-style Yu Sheng — presented as a platter of julienned vegetables, crispy taro, Wujiang salted vegetables and radish, crowned with a luscious finish of house-made sauce specially crafted with a tangy blend of Chaoshan sour plum accented with subtle hints of lemon and chilli, and elevated by the crunch notes of peanuts and pumpkin seeds. Set atop the premium Yu Sheng selection, the Lobster Yu Sheng features sweet, succulent live Australian lobster as the centrepiece — an auspicious symbol of happiness and abundance. Lobster Yu Sheng is available in Fortune Set Menu (SGD 688++ per person) or as a la carte option (SGD 1388++ per portion), while other symbolic toppings include geoduck clam to herald good fortune, or Atlantic salmon for prosperity.
Celebrate cherished tradition of togetherness this Lunar New Year with four exquisite set menus featuring signature favourites and auspicious dishes, thoughtfully crafted for the joyous occasion. A symbol of harmony and reunion, the Pan-fried Lotus Root Patties stuffed with Crab Meat showcase the crisp texture of lotus root complemented by the delicate sweetness of crab meat. This delightful appetiser is a savoury addition to the classic appetiser selections such as Marinated Jellyfish Head with Caviar, Crispy Roasted Pork Belly, and Marinated Celtuce with Pickled Chilli.
The celebratory feasts spotlight the Charcoal-grilled New Zealand Live Abalone, available in the Fortune Set Menu. Signifying abundance and good fortune, the slow-cooked abalone presents an umami-rich delicacy with refreshingly sweet notes. Other classic signature dishes include Seared Xisha Lobster with Creamy Garlic Sauce and Crispy Fried Chicken with Flaxseed, each conveying auspicious wishes of good luck for the year ahead.
The Lunar New Year feasting culminates on a sweet note, with each set menu presenting a thoughtfully paired dessert. Diners can look forward to a refreshing lemongrass jelly with peach gum and aloe vera or indulge in an exquisite bird's nest dessert with zesty yuzu honey, or the warming spice of ginger paired with the indulgent sweetness of Hetian jujube, a variety of Chinese red dates.
